Grilled Teriyaki Beef

Wow, can you believe it has been one year and 255 posts since I began this blog? Happy 1 year anniversary to me! Summer weather is still here in the Pacific Northwest, so tonight I want to bring you another dish from the grill. Teriyaki Beef is actually an easy dish to make – cube up some ingredients, make a sauce, marinate the beef, assemble the skewers, and then grill. Since the dish is meat and vegetables on a stick, just add a simple starch like white rice and you are good to go for a complete meal. Alcatra (Portuguese Beef Stew)

Tonight I made alcatra – a simple, but incredibly flavorful Portuguese beef stew made with beef shank, onions, some spices and wine. I researched many recipes and decided to go with the extremely simple recipe on the America’s Test Kitchen website, but I plan try a few of the others I found too. Several of those are family recipes from Terceira, an island in the Azores where this dish originated. I am intrigued by the myriad of variations, so watch for new posts in the future. Believe me, this stew would pair nicely with the No Knead Dutch Oven Bread; just imagine enjoying a flavorful beef stew with a delicious crusty bread. Koshari

Today I made something new. Something I found online that piqued my curiosity.  Something based on a friend’s request for dishes with lentils. This recipe is all about happy coincidences. Recently, I received an update from Suzy’s The Mediterranean Dish blog which included her Koshari recipe. I was very intrigued by her description of this Egyptian street food dish and wanted to try it. I had the added incentive of helping my friend out with his request for dishes with lentils. Beef Stir Fry with Oyster Sauce

Here is a picture post of my recent Beef Stir Fry with Oyster Sauce made using slight changes to the Spicy Beef Noodles with Asparagus recipe.  I simply switched out the Tom Yum paste for a combination of 2 tablespoons of Oyster Sauce, 2 teaspoons of Fish Sauce, and 2 teaspoons of Seasoning Sauce while using 4 oz of plain Chuka Soba noodles instead of the Fortune Hot and Spicy Noodles. How about some Sunday gravy? Let’s make Bolognese Sauce!

I thought today was a great day to make a Sunday gravy and a Bolognese sounded tasty.  Don’t be daunted by the amount of ingredients and what appears to be substantial effort; it really is quite easy to prepare. Also this recipe allows me to work in some of the ingredients I have used recently so I reduce waste. I will be using the remainder of the country bacon from the Chuckwagon Chili, the cherry/grape tomatoes, mozzarella cigieline, and fresh basin used in the Caprese Poppers, and the remaining half onion and green pepper from the Sweet and Sour Chicken.  So if menu planning doesn’t work out, resort to improvisation! Tonight’s dinner is simple and fast – and has a little bit of kick from cooking with tequila and lime! Margarita Fajitas Ingredients: 6 oz thin sliced beef, cut into strips 1/2 onion, sliced radially 1/2 green pepper, sliced lengthwise 1 stalk celery, sliced (and/or 1 carrot julienned, sliced mushrooms, quartered broccoli flowerets, etc) 1 1/2 tsp garlic, minced 1 lime, zested and juiced 1 tbsp chili powder 1 tsp ground cumin 1 tsp dried cilantro 1 – 2 oz silver tequila 3 – 4 flour tortillas 2 tsp vegetable oil salt and pepper to taste Shredded cheese (optional) Preparation: Heat a cast iron skillet over high heat.   Tonight, I decided to make a quick chicken stir fry. With fresh vegetables, Thai cargo rice, and lean chicken breast, this meal is healthy and balanced.
