Clambake Party

Last night I threw a clambake party for some friends – sort of an end of the summer bash with a feast of seafood. In all actuality, the guys were here to help me with a foil packet clambake recipe I was working on… I needed taste testers. The party was a success as my friends devoured the results with everyone completely satisfied with the mixture of clams, prawns, lobster, linguiça, corn, and potatoes slathered in seasoned butter, aromatics, and fresh herbs. Moro de Habichuelas

I know, I can hear it now… “What is this ‘More habits’ dish?”  Basically, it is red beans and rice. A Caribbean style red beans and rice – in the style from the Dominican Republic (or so I read). This dish was an experiment in trying to scale the dish down to cooking for one, while still keeping the flavor and texture that makes this dish the staple it is.  Overall, my effort tasted fine (maybe it needed a bit more salt for the amount I made) and the texture was close (the rice was slightly overcooked). Creamy Acorn Squash Soup

As I mentioned in a previous post, Autumn is a perfect time to spend some time making soup for dinner. To me, there is something relaxing about cooking and preparing a soup is probably the most relaxing culinary endeavor for me (except maybe baking…). This soup is a sweet and savory meal highlighted by warm spices (ginger and cloves), brown sugar, and thyme packaged in a velvety cream. To give the soup some ‘tooth’, I add crispy linguiça sausage bits and the renderings to provide a salty aspect.
