Here is a stir fry recipe showcasing green beans and prawns. The sauce in this dish is light and not the typical spicy style you probably have come to expect from me. See… I can throw you a curve once in a while! This dish is based on one I enjoy at a neighborhood Chinese restaurant and is perfect for a quick to prepare and light dinner. Need I say it is versatile? Like nearly all stir frys, you can tweak and twist the ingredients to suit your unique tastes and desires (and ingredients!). Substitute chicken for the prawns, no problem. Replace the green beans with broccoli, no worries. To add a bit more umami to the dish, I used rehydrated oyster mushrooms. They will also add…
Tonight I made a dish found at nearly every Italian restaurant I can ever recall visiting. It is a simple, yet delicious scallopini style dish featuring Marsala wine as the primary ingredient in the sauce. If you do any research on this dish, you will find the variations for this recipe are widespread. Typical variations start with whether to use dry or sweet Marsala. Next there is the whole ‘should I include cream or not’ debate. And let’s not even begin the discussion on whether the chicken should be dredged in flour or not. So, after a lot of reading and contemplating on how I have made this dish in the past, I created this recipe as a compilation of what I learned through…
Here is a perfect Summer dish – a Vietnamese-style Noodle Bowl with Chicken. Herbs like mint and cilantro bring a freshness while lime brings brightness, chili brings heat, carrot sweetness, and the dressing tons of flavor to support it all. And let’s not forget the chicken; cooked in oyster and hoisin sauces before grilling or searing to add even more flavor. You have to agree there is a lot of flavor in this meal. Go ahead and take the challenge by making this dish. The lengthy recipe is not difficult and the results are spectacular! Have you ever wondered what I do with the remaining portions of raw ingredients that do not show up in a following post? I think solving that dilemma was critical to success when cooking for one – menu planning. It is easy enough to know that even moderate amounts (like one pound of ground beef) needs to be split into two or three (preferable) portions for different meals. But what about vegetables like bundles of asparagus, half peppers and half onions, half cans of diced tomatoes, etc? Typically I create a weekly menu and shop for the ingredients needed for those meals. I construct the menu so that I can make dishes that use partial amounts to reduce waste, but avoid stagnation in dishes. Well, this post should…
Tonight’s recipe is based on Claire Saffitz‘ recipe on the Bon Appetit website, which I found delicious. Like many stir fry dishes, this one is easy to prepare and full of flavor. Instead of serving it with rice I opted to make it with thin rice noodles (like the ones used for Phad Thai), a wonderful change-up. I also added oyster sauce to the dish to increase the umami aspect as a contrast to the spicy red pepper flakes and sour rice vinegar/rice wine combination. The sauce was a nice thickness – coating the chicken and green beans nicely and soaked into the rice noodles completely. Try this recipe and see for yourself, this simple dish has a lot going on! Tonight I made a quick family favorite dinner; chicken picatta with asparagus. This dish has always been a hit; the lemony sauce and the briny capers are the stars here. A perfect way to change up your ‘same old’ chicken while making a different pasta dish. This dish is surprisingly light and a great warm evening dish when you may not want a big heavy meal. It is also quick to prepare – another benefit on those warm Summer evenings and who would have thought you could get so much flavor from such a simple dish! Perhaps that is one reason this dish is a regular menu item in Italian restaurants. And who can blame them… I certainly can’t. Yet, I love to…
I warned you that with the nice weather this weekend, I would be grilling. Tonight is another grilled dish. Chicken kebabs are so simple and versatile… and perfect when cooking for one. Packed with vegetables of your choice and flavored as you desire, this dish is great for summer dining. Having guests – no problem. This recipe is also easily extensible. And the best part is you can enlist your guests to build their own with the ingredients they like. That is one a way to get the party going. So get out and grill some kebabs… whether you have guests or not! Save Print Chicken Kebabs Prep time: 15 mins Cook time: 20 mins Total time: 35 mins Serves: 1  …
Are you ready for another simple and delicious recipe? This chicken katsu recipe is just that, we can make this tasty dish using the simple flour, egg, and panko crumb breading process (like we used in the Schnitzel recipe). One of the keys to this dish is the sauce – and I have found a simple way to make it and in a small quantity so there is little waste. So let’s get cooking… this dish will easily satisfy your katsu craving! Here is a recipe I found on RecipeTinEats. Nagi has a winner with this recipe and her versatile ‘Charlie‘ sauce is the best. Chow Mein is wonderful since it is easy and quick to prepare, loaded with vegetables, is easily adaptable with many different vegetable and meat combinations, and has plenty of flavor. In my version pictured, I added oyster mushrooms, red and green bell peppers, and white onion for even more vegetable flavors! Easy enough for a weeknight dinner, versatile enough for using up any leftover vegetables (or meats) you have, this recipe is a winner through and through. Give it a try! Previously I posted a recipe for a Mexican restaurant style Arroz con Pollo, but today I want to share a different type of Arroz con Pollo. This recipe is for a rice and chicken dish with Caribbean flair. Simply seasoned yet bountiful with flavorful ingredients, this hearty meal satisfies a healthy hunger. With a little preparation and initial cooking effort, the remainder of this dish cooks without fuss, making it a good recipe for busy lives. I find this dish a great way to enjoy the taste of the Caribbean any time… without the hassle of an airport!
