Sous Vide Braised Red Cabbage

One of the first posts I wrote for Cooking-4-One was a recipe for Sweet and Sour Red Cabbage, a delicious side that I enjoy regularly. Given my recent sous vide experiments with vegetables and grains, I searched to see what it would take to make this dish using my immersion circulator. Well, I found the information I desired and the results I saw looked delicious. The one recipe that I based mine on comes from Kate Williams. I like egg rolls and in the past had many people over to the house for my prawn or chicken egg rolls. They were big and bold, vegetable filled and flavorful. Then I just stopped making them and began to experiment with different cuisines. But egg rolls were always there – only I enjoyed them when I would go out. Experiment: Okonomiyaki

Today I decided to try and make a dish I have only had at restaurants, but enjoy immensely. Okonomiyaki – that delicious cabbage ‘pancake’ made with various vegetables and meats – seems simple but is actually quite challenging. The biggest challenge was deciding on a recipe; there are so many!  The next challenge was deciding on the ingredients I wanted to use and lastly, was making the okonomiyaki sauce and kewpie mayo that are necessary for this dish. Chicken Chow Mein

Here is a recipe I found on RecipeTinEats. Nagi has a winner with this recipe and her versatile ‘Charlie‘ sauce is the best. Chow Mein is wonderful since it is easy and quick to prepare, loaded with vegetables, is easily adaptable with many different vegetable and meat combinations, and has plenty of flavor. In my version pictured, I added oyster mushrooms, red and green bell peppers, and white onion for even more vegetable flavors! Making Kimchi

Tonight I am going way out on a limb. I have never made kimchi before, but I had some napa cabbage to use up so I thought, “what the heck, why not?”.  I found several recipes online and from them I settled on the tweaked recipe below. Tonight I made a flavorful soup for a cold winter night using the rest of the potatoes and cabbage I had from last week’s shopping. The basic recipe comes from Rachel Ray, but of course, I changed it. The primary changes were to add hickory smoked bacon and two types of paprika, something I felt would provide depth of flavor. To be honest, I would expect to see this recipe in a Central or Eastern European home cookbook with all it has going on. Here is a fast and easy meal, either for dinner or lunch. One of my favorite wursts to eat are knackwurst and there is a warm feeling of family when I have this dish. I ate these wurst all the time as a kid and it was one of the first meals I prepared for myself when learning to cook as a youngster. Again, as part of the planning (remember, I used part of a cabbage head in the Drunken Noodles recipe a few days ago), here comes a tasty German inspired braised cabbage dish. Feeling like something spicy?  Feeling like something incredibly satisfying?  How about robust flavors?  Well, if all this sounds great to you, may I suggest tonight’s meal – Drunken Noodles! I made this recipe with chicken, Thai basil, cilantro, fish sauce, ginger, shallot, scallions, cabbage, carrot and a host of other supporting ingredients. Sweet and Sour Red Cabbage (Rotkohl)

Like sauerkraut, rotkohl has many variations.
