I was recently exposed to this Ethiopian spice blend and just had to find a new way to use it. This spicy and robust blend of chilis, coriander, cumin, etc. just screams to be used. Remember in one of my first posts I mentioned planning to reduce the possibility of waste.  Well, when I used the ricotta in two recent recipes (Simple Stollen and Lemon Blueberry Ricotta Waffles), I still had approximately 1/4 cup remaining. Not wanting to waste it, I built this recipe around it. Roasted Parmesan Broccoli

Here’s a quick, delicious way to prepare broccoli, that pairs perfectly with Veal or Chicken Picatta (and I’m sure other dishes as well!). The simplicity of this dish is in roasting the broccoli at a high heat, producing tasty caramelization. Adding the parmesan after roasting keeps the cheese from potentially burning, yet still melts nicely from the residual heat. I think it is time to roast some broccoli, don’t you? Beef Stir Fry with Oyster Sauce

Here is a picture post of my recent Beef Stir Fry with Oyster Sauce made using slight changes to the Spicy Beef Noodles with Asparagus recipe.  I simply switched out the Tom Yum paste for a combination of 2 tablespoons of Oyster Sauce, 2 teaspoons of Fish Sauce, and 2 teaspoons of Seasoning Sauce while using 4 oz of plain Chuka Soba noodles instead of the Fortune Hot and Spicy Noodles. Tonight’s dinner is a dish I tweaked for my daughters. In 2000, we visited a Seattle Italian restaurant  and my oldest daughter ordered this dish.
