Surf and Turf Fried Rice

Want to kick things up a little bit? Then this dish is for you. Last night’s dinner was based on Thai crab fried rice, but I wanted more than the delicious dish I can get at any number of Thai restaurants in the area. So I mashed up a simple beef stir fry with crab fried rice to create Surf and Turf fried rice. This way I incorporated vegetables into the meal, paired the richness of the crab with some beef, and created something new (I think).  This dish is a great shareable since it definitely makes enough for two… or you could just enjoy leftovers next day! So now that I have your attention, let’s get it done!   Save Print Surf and…

Beef Stir Fry with Oyster Sauce

Here is a picture post of my recent Beef Stir Fry with Oyster Sauce made using slight changes to the Spicy Beef Noodles with Asparagus recipe.  I simply switched out the Tom Yum paste for a combination of 2 tablespoons of Oyster Sauce, 2 teaspoons of Fish Sauce, and 2 teaspoons of Seasoning Sauce while using 4 oz of plain Chuka Soba noodles instead of the Fortune Hot and Spicy Noodles. I started with these ingredients… and ended with this meal! Yum!     Save Save…

Sous Vide Beef Pho Experiment

Today was a day for experimenting in the kitchen. I decided to make Pho from scratch using the sous vide cooking method. Sounds wild, huh? Well this experiment was fun, challenging, slightly anxiety inducing, and utterly delicious!  I won’t post the recipe yet as it needs a bit of refinement, but let’s just say I am already looking forward to my next sous vide pho effort.  Here are some photos to whet your appetite for that next effort too! Salisbury Steak

This recipe was triggered by watching ‘That ’70’s Show’ late the other night. In the episode, Midge has left Bob and Bob, heartbroken and lacking culinary skills, is at the supermarket buying a stack of Salisbury Steak TV dinners. A woman, Joann, approaches and makes fun of the hapless Bob and the Salisbury Steak dinners. Now I thought… “Hey, don’t disrespect the delicious Salisbury Steak! Make fun of TV dinners all you want, but let’s enjoy the tasty dinner Salisbury Steak can be!”. So without further ado, let’s make Salisbury Steak and you can judge for yourself! Spicy Beef Noodles with Asparagus

Today I had a hankering for noodles – tasty spicy fried noodles. With that desire and having asparagus available from earlier this week, I decided using thin sliced beef and red pepper would be perfect for my fried noodles. I picked up a package of Fortune Yakisoba Hot and Spicy Stir Fry Noodles at the local store to use as the base for my spicy fried noodles. These noodles are available in the refrigerated section and are simple to prepare – simply soak in hot water, drain well and stir fry. The rest of this recipe is a basic stir fry with one twist – I added Tom Yum Paste to the sauce mix. Are you ready to prepare something delicious and healthy in less than 30 minutes…

Goulash (Beef Stew)

With the colder, rainy weather of fall here in the Pacific Northwest, I typically add a few of my favorite soups and stews into my recipe rotation. This recipe is adapted from my mom’s goulash recipe, another wonderful memory from my childhood. Easy to prepare, this recipe produces a hearty and tasty beef stew that you won’t mind having leftovers, if there happens to be any!  Add slices of a baquette with fresh cream butter warmed in the oven and you have a heavenly meal in front of you.  So… let it rain and be gray, we’re enjoying a flavorful hot stew tonight! Roast Beef Sliders

Here is a quick, tasty lunch or snack, depending on when you want it and how hungry you are! The key to this slider, in my opinion, is the pretzel bun. There is something about roast beef, horseradish, and a pretzel bun that makes my mouth water. Add some cheese and sliced pepperoncini to kick it up a little – like all sandwiches, the sky is the limit. Let’s get to it! Save Print Roast Beef Sliders Prep time:  5 mins Cook time:  4 mins Total time:  9 mins Serves: 1   Ingredients 2 pretzel slider buns 6 oz deli sliced roast beef 2 tsp horseradish 4 – 5 pepperoncini, sliced thinly 4 tbsp shredded Italian cheese (Mozzarella, Romano, Parmesan, Asiago) Instructions Preheat…

Swedish Meatballs

Prepare to have your taste buds engaged! This recipe for Swedish Meatballs produces a wonderfully flavorful meal that is well worth the effort.  This recipe can be made with just ground beef, but it comes alive with a mix of beef and lamb (or beef, lamb and pork!). The addition of nutmeg and allspice with a slight hint of cinnamon really warms up the flavors and deepens the creamy gravy augmented with sour cream.  Are you intrigued now?  If so, let’s get to it! Beef Rouladen

Tonight’s dinner is a big hit with family and friends, but sometimes I just want to enjoy this meal by myself. It does take a bit more planning and preparation than most of my recipes, but the results are worth the effort. Basically, rouladen is a German dish of thin beef steak slathered with stone ground mustard and wrapped around bacon, onions, carrot, and pickle, then seared and braised until tender. The braising liquid is the base for a flavorful gravy – perfect over spaetzle or potatoes as an accompaniment. Don’t be afraid of this recipe as your effort will be well rewarded. More Labor Day fun… Chuckwagon Chili

Have you ever thought about cooking something based on a concept?  Well, that is where this recipe comes from. One day I was watching an old Western movie (I think it was Red River with John Wayne) and during a scene at the chuckwagon, I thought about what the cook would have available to make a dinner for the cowboys.  Thinking they would not be able to use many fresh ingredients, I began to formulate a recipe from what may be available on a chuckwagon – dry beans, dried chilis, dried or preserved meats, dried herbs, etc. Now… I will admit I did not research this topic at all. There may actually be a website or book that contains a list of what a chuckwagon carried and…
