Sloppy Joes

Let’s revisit a dish from the past that screams ‘comfort’ food. And strangely enough, this dish is also good for using up leftover vegetables like onion, celery, peppers, etc. Here’s the original recipe I wrote – Sloppy Joes – and it is tasty, but this week while in ‘rona lockdown, I decided to use up some vegetables and hamburger buns (I mean how can 1 person eat 8 hamburger buns before they go stale and mold!), so sloppy joes got the call. Also, this dish got the call because there was no pork shoulder available to make pulled pork! LOL  So dig in and enjoy, we all need a little comfort right now. Mac and Cheese Kielbasa Casserole

Today, I want to share a mash-up recipe. If you have been a regular follower, you have seen kielbasa and macaroni and cheese show up a few times.  Well, they are easy meals to prepare and are some of the comfort foods that many people like. So, I figure if you are going to cook, you should cook what you like to eat, right?  And what better way to satisfy your hunger than by combining two items you like to make a third. This recipe uses the Macaroni and Cheese recipe from earlier this week, adds fried kielbasa and frozen green beans, packs it into a small casserole dish, and bakes it with a panko crust. How easy is that?  Just think, with a few quick changes…

Sloppy Joes

Here is another comfort food recipe for everyone to enjoy. It has been a long time since I made Sloppy Joes and I cannot even come up with a good reason why. Since these are easy to make and delicious to eat, they should be enjoyed more often. I will have to put this meal into the rotation – they deserve a spot, don’t you think? Save Print Sloppy Joes Prep time:  15 mins Cook time:  35 mins Total time:  50 mins Serves: 2   Ingredients 8 oz lean ground beef 1 tbsp canola oil ½ onion, diced 1 carrot, diced ½ red or green pepper, diced 1 stalk celery, diced 2 garlic cloves, minced 6 – 8 small crimini mushrooms, sliced 2…

Macaroni and Cheese

Ahhh, the joys of comfort food. There is something about homemade macaroni and cheese that is so satisfying and it is so easy to make. This recipe will show you how to make a delicious macaroni and cheese in about the time it takes to boil the pasta.  So pick up some tasty cheeses and let’s get busy making one of the classic comfort foods! Save Print Macaroni and Cheese Prep time:  10 mins Cook time:  10 mins Total time:  20 mins Serves: 2   Ingredients 6 oz shell or elbow pasta 2 oz bacon, sliced (optional) 1½ oz gruyere cheese, cubed or shredded 1 oz gouda cheese, cubed or shredded 1½ oz fontina cheese, cubed or shredded 1 oz…

Skillet Apple Pie for One

Do you like homemade apple pie? Do you not want to make a full-size pie that you have to eat by yourself over several days? I agree… no  matter how much I like something (even apple pie!), I don’t want to eat it every day and I certainly don’t want to waste it. Well, here is a recipe for making a skillet apple pie for one.   Yep, that’s right… a real deal apple pie for one person – YOU! I wanted to make a delicious pie that did not take extra effort (like pre-cooking the apples, making a caramel sauce, etc) and I think I have succeeded by blending several recipes together. So here you go… a…

French Fries for One

Today I am sharing a recipe I received via a friend for oven baked crispy french fries.  Much like mashed potatoes for one, I bet french fries are something most people do not make at home, especially if you are cooking for one. The myriad of problems with deep frying at home to get the desired results are just not worth the effort. That’s why I jumped on this oven baked option.  And of course, I have twisted it slightly based on the most delicious french fries I can recall ever eating – the togarishi french fries at Redfin in Seattle (that unfortunately has since closed). I challenge you to try this recipe… and even create your own special fry seasoning, sharing your results in…

Bourbon Baked Beans

Here is a throwback recipe I created as a challenge after a ‘Best of the Worst’ Bourbon tasting party I coordinated last year. With several slightly unpalatable bourbons left over, I accepted the challenge of creating recipes to use the leftovers in new recipes as an incentive for attendees to take the leftovers home with them!  Here is the first recipe I created – a simple and flavorful bourbon baked beans. Save Print Bourbon Baked Beans   Ingredients ½ cup brown sugar ½ cup bourbon ½ onion, diced 1 clove of garlic, minced 1 tbsp canola or vegetable oil ¼ tsp cloves 6 slices bacon, cut in strips 1 15 oz can of pinto, great northern, or kidney beans (or equivalent amount of dry beans, soaked…

Roast Beef Sliders

Here is a quick, tasty lunch or snack, depending on when you want it and how hungry you are! The key to this slider, in my opinion, is the pretzel bun. There is something about roast beef, horseradish, and a pretzel bun that makes my mouth water. Add some cheese and sliced pepperoncini to kick it up a little – like all sandwiches, the sky is the limit. Let’s get to it! Save Print Roast Beef Sliders Prep time:  5 mins Cook time:  4 mins Total time:  9 mins Serves: 1   Ingredients 2 pretzel slider buns 6 oz deli sliced roast beef 2 tsp horseradish 4 – 5 pepperoncini, sliced thinly 4 tbsp shredded Italian cheese (Mozzarella, Romano, Parmesan, Asiago) Instructions Preheat…

Just a picture post today, I made a biscuit breakfast sandwich with a sausage patty, scrambled eggs, and cheese…

Biscuits and Chorizo Gravy

Recently, some friends asked me if I could post more breakfast meals. Coincidentally a good buddy told me about a restaurant that makes this variant of Biscuits and Gravy (thanks Adam!).  Before I could get to the restaurant to try it, I decided to make it myself. Another breakfast post to honor the request and my curiosity satisfied all in one meal – that’s definitely a bonus! Are you ready?  I certainly am! Biscuits and Chorizo Gravy Ingredients: 6 oz bulk Chorizo 1 can refrigerated Biscuits (the 5 count buttermilk is my favorite!) 8 oz whole milk, half and half or cream 1 1/2 tbsp all purpose flour black (or white) pepper to taste parsley for garnish (optional) paprika for garnish (optional) Preparation: Bake the…
