Rice Stuffing

Here is another family favorite recipe I want to share with everyone before Thanksgiving. I get requests for this recipe every year from friends that have enjoyed this stuffing at past holiday meals. Heck, I even make this recipe for myself when I want to enjoy a holiday like meal just because! Leftovers will not last long either as they are incredible fried in a little butter the next day then added to leftover turkey and gravy for a hot turkey sandwich. Spicy Beef Noodles with Asparagus

Today I had a hankering for noodles – tasty spicy fried noodles. With that desire and having asparagus available from earlier this week, I decided using thin sliced beef and red pepper would be perfect for my fried noodles. I picked up a package of Fortune Yakisoba Hot and Spicy Stir Fry Noodles at the local store to use as the base for my spicy fried noodles. These noodles are available in the refrigerated section and are simple to prepare – simply soak in hot water, drain well and stir fry. The rest of this recipe…

The Godfather, Part 2

Another Friday, another cocktail recipe as promised! Tonight, it is the follow-up I mentioned last week – The Godfather, Part 2. Simply a twist on the classic Godfather cocktail of scotch and amaretto, this one substitutes the amaretto with… Tuaca!  Yes, that delicious vanilla citrus liqueur adds a wonderful flavor to the scotch. I add a drop or two of angostura bitters to enhance the overall experience, but it is purely optional. Creamy Cheese Ravioli with Artichoke and Asparagus

This recipe is something I crafted from ingredients I had at home after a recent short trip. It is said ‘necessity is the mother of  invention’. If so, then ‘hunger is the motivator to recipe creation’!  From a few fresh, frozen, and pantry ingredients, this recipe came into being. It is simple and quick to prepare – something perfect for times when patience alludes you, like when I came home the other night!  Well, it isn’t going to make itself, so let’s get cooking! Crostini with Brie, Soppressata and Pepper Jelly

We’ve all seen or had the brie in puff pastry served with a tart/tangy jam (I prefer a good currant jam!). Today I played with a new appetizer – crostini with brie, soppressata and pepper jelly. This combination works as either just brie and pepper jelly (similar to the original that inspired this effort) or with the added soppressata. The addition of the soppressata gave the appetizer some heartiness and the salty, peppery soppressata complimented the creamy, tangy brie and spicy, sweet pepper jelly for a more complete taste experience. Just think, here…

Goulash (Beef Stew)

With the colder, rainy weather of fall here in the Pacific Northwest, I typically add a few of my favorite soups and stews into my recipe rotation. This recipe is adapted from my mom’s goulash recipe, another wonderful memory from my childhood. Easy to prepare, this recipe produces a hearty and tasty beef stew that you won’t mind having leftovers, if there happens to be any!  Add slices of a baquette with fresh cream butter warmed in the oven and you have a heavenly meal in front of you.  So… let…
