1 7.7 oz package of Fortune Yakisoba Hot and Spicy Noodles
1 cup asparagus, cut into 2 inch lengths
½ red pepper, julienned
1 celery stalk, sliced diagonally
½ small yellow onion, sliced radially
1 tbsp minced garlic
1 tbsp Tom Yum Paste
3 tbsp peanut oil, divided
sesame oil (optional)
sesame seeds (optional)
Instructions
Prepare the noodles per the package directions, soak in how water to loosen, drain well, and set aside.
Heat a wok or large skillet over high/medium high heat.
Add 1 tbsp peanut oil and swirl to coat the bottom.
Add the beef and stir fry until the pink is gone, approximately 2 minutes.
Remove beef to a bowl and add another tablespoon of peanut oil, swirl to coat the bottom.
Add the asparagus and stir fry approximately 90 seconds.
Add the red pepper, celery, and onion, stir fry vegetables approximately 2 minutes and remove to a bowl.
Add the last tablespoon of peanut oil and swirl to coat the bottom.
Add the noodles and stir fry approximately 2 minutes.
Add the garlic and stir fry an additional minute until fragrant.
Reduce heat to medium/medium high and add the sauce packet from the noodles with ½ cup of water mixed with the tom yum paste.
Toss the sauce to coat the noodles and stir fry approximately 1 minute.
Add the beef and vegetables, toss to reheat and coat completely.
Remove to a large plate or bowl and garnish as desired.
Notes
While the package states the noodle sauce mix is Hot and Spicy, I did not find it overwhelming. I added the tom yum paste to increase the heat level and add robustness to the overall flavor. The asparagus can be replaced with other vegetables - specifically bok choy, green beans or broccoli flowerets. Garnishes of scallions, sesame seeds, sesame oil, or chili oil can be used to enhance the dish to your specific liking. I invite you to experiment and allow your taste buds to guide you!
