Roasted Rosemary Garlic Potato Slices
- 1 russet potato, sliced uniformly into ⅛ inch slices
- 4 cups of near boiling water
- 2 tbsp white vinegar
- 2 tbsp olive oil
- Spice Island Rosemary Garlic blend
- Fresh racked pepper
- Preheat the oven to 400 degrees.
- Place the potato slices into a medium glass bowl and ensure the potatoes are submerged.
- Add the hot water and vinegar.
- Place bowl into the microwave for 3 - 4 minutes at 50% power.
- Allow the potato slices to rest for 10 minutes.
- Heat the bowl a second time for 3 - 4 minutes at 50% power.
- Allow to rest for another 10 minutes before draining well.
- Add the olive oil and toss to coat.
- Place the slices onto a large baking sheet and sprinkle with pepper and rosemary garlic blend.
- Bake in the oven for 30 minutes on the middle rack, checking halfway through if the slices should be turned over when lightly browned.
- Once lightly browned and turned over, change the oven to broil on high leaving the potatoes on the middle rack.
- Check the potato slices every 2 minutes until browned as desired.
