No Bake Pumpkin Mousse
- 1 15oz can of pumpkin puree
- 8 oz cream cheese at room temperature
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground cloves
- In a medium bowl, add the cream and mix on medium until frothy, approximately 1 to 2 minutes.
- Add the powdered sugar and vanilla extract.
- Mix on Medium\Medium-High until stiff peaks form.
- Transfer whipped cream to a second bowl.
- In the medium bowl (no need to clean it), add the cream cheese and mix on Medium-Low until smooth.
- Add the pumpkin puree and spices, mix on Medium until well incorporated.
- Add the whipped cream and fold it in until smooth and consistent.
- Transfer mixture to a piping bag with a medium tip (or a recloseable bag).
- Pipe mixture into small ramekins or dessert cups in a circular fashion.
- Sprinkle additional ground cinnamon as a garnish.
