Cranberry Oatmeal Cookies
- ½ cup (1 stick) butter, softened
- ¼ cup plus 2 tbsp firmly packed light brown sugar
- ¼ cup granulated sugar
- 1 Egg
- ½ tsp vanilla extract
- ¾ cup all-purpose flour
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt (optional)
- 1½ cup uncooked oats
- ½ cup dried cranberries
- Heat oven to 350°F.
- In a medium bowl, whisk together flour, baking soda, salt, and spices then set aside.
- In a large bowl, beat butter and sugars together on medium speed of electric mixer until creamy.
- Add egg and vanilla and beat well.
- Add flour mixture to butter mixture, mix until well combined.
- Stir in oats and cranberries.
- Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake 10 to 15 minutes or until a light golden brown.
- Cool 1 minute on cookie sheets before removing to a wire rack to cool completely.
- Store tightly covered.
