Peri Peri Prawns

Ingredients
  • 8 oz large (16-20) prawns, peeled and deveined
  • 2 tsp peri peri sauce
  • 1 tsp olive oil
  • juice of ½ lemon
  • 2 tsp butter
  • chopped parsley as a garnish
Instructions
  1. In a small bowl, whisk together the peri peri, lemon and olive oil.
  2. Add the prawns to the sauce and allow to marinate, covered in the refrigerator, for 15 - 30 minutes.
  3. After marinating, drain the prawns and reserve the sauce.
  4. Heat a saute pan over Medium/Medium-High heat.
  5. Add the butter and swirl to melt.
  6. Once the foaming has stopped, add the prawns in a single layer and cook for 1 - 2 minutes.
  7. Turn the prawns over and cook for another 1 -2 minutes before removing to a plate to keep warm.
  8. Add the reserved sauce to pan and reduce by half, approximately 1 - 2 minutes.
  9. Plate the prawns and drizzle reduced sauce over top before garnishing with parsley.
