Apple Fritter Bread
Total time
- 1½ cups flour
- ⅔ cups granulated sugar
- ½ cup butter, softened
- 2 eggs
- 1¾ tsp baking powder
- ½ tsp vanilla extract
- ½ cup milk
- 2 apples, peeled and cut into ½ inch chunks
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- ⅓ cup brown sugar
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ⅛ tsp ground cloves
- ½ cup powdered sugar
- 1 - 3 tbsp cream
- Preheat the oven to 350 degrees.
- Spray a 9x5 loaf pan with non-stick spray.
- In a small bowl, whisk together the sugar swirl ingredients and set aside.
- In another small bowl, whisk together the granulated sugar and cinnamon for the apple filling.
- Sprinkle the sugar mixture over the apple pieces and gently toss to coat before setting aside.
- In a large bowl, cream the butter and granulated sugar together until smooth and creamy.
- Stir in the eggs, 1 at a time, until incorporated.
- Stir in the vanilla.
- Add the flour and stir in until just mixed.
- Add the milk and stir until incorporated.
- Add ½ the batter into the loaf pan and spread evenly.
- Add ½ the apples over the batter.
- Lightly press the apples into the batter.
- Sprinkle ½ the sugar swirl over the apples and batter.
- Pour the remaining batter over top the apples and sugar swirl.
- Add the remaining apples and lightly press into the batter.
- Top with the remaining sugar swirl.
- Using a knife or chopstick (my favorite), swirl the apple, sugar and batter lifting and lowering as you go.
- Bake in the preheated oven for 50 to 60 minutes or until a cake tester inserted comes out clean.
- Cool on a wire rack for 15 minutes or so.
- Remove from the loaf pan and cool completely.
- In a small bowl, add the powdered sugar and ½ the cream.
- Whisk until smooth, adding cream until it is the consistency desired.
- Drizzle the glaze over top the now cooled loaf and slice to serve.
