Apple Fritter Bread

Ingredients
Bread batter
  • 1½ cups flour
  • ⅔ cups granulated sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1¾ tsp baking powder
  • ½ tsp vanilla extract
  • ½ cup milk
Apple filling
  • 2 apples, peeled and cut into ½ inch chunks
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
Sugar swirl
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ⅛ tsp ground cloves
Glaze
  • ½ cup powdered sugar
  • 1 - 3 tbsp cream
Instructions
  1. Preheat the oven to 350 degrees.
  2. Spray a 9x5 loaf pan with non-stick spray.
  3. In a small bowl, whisk together the sugar swirl ingredients and set aside.
  4. In another small bowl, whisk together the granulated sugar and cinnamon for the apple filling.
  5. Sprinkle the sugar mixture over the apple pieces and gently toss to coat before setting aside.
  6. In a large bowl, cream the butter and granulated sugar together until smooth and creamy.
  7. Stir in the eggs, 1 at a time, until incorporated.
  8. Stir in the vanilla.
  9. Add the flour and stir in until just mixed.
  10. Add the milk and stir until incorporated.
  11. Add ½ the batter into the loaf pan and spread evenly.
  12. Add ½ the apples over the batter.
  13. Lightly press the apples into the batter.
  14. Sprinkle ½ the sugar swirl over the apples and batter.
  15. Pour the remaining batter over top the apples and sugar swirl.
  16. Add the remaining apples and lightly press into the batter.
  17. Top with the remaining sugar swirl.
  18. Using a knife or chopstick (my favorite), swirl the apple, sugar and batter lifting and lowering as you go.
  19. Bake in the preheated oven for 50 to 60 minutes or until a cake tester inserted comes out clean.
  20. Cool on a wire rack for 15 minutes or so.
  21. Remove from the loaf pan and cool completely.
  22. In a small bowl, add the powdered sugar and ½ the cream.
  23. Whisk until smooth, adding cream until it is the consistency desired.
  24. Drizzle the glaze over top the now cooled loaf and slice to serve.
