Sweet Chili Grilled Prawns
- 6 oz prawns, U8 or 16/25 size
- ⅓ cup sweet chili sauce (like Mae Ploy sauce)
- 1 tbsp fish sauce
- 1 tsp sambal
- 2 tsp lime juice (juice from half a lime)
- togarishi shichimi (optional)
- cilantro for garnish
- Heat and clean the grill, heating the grate to High.
- In a bowl, combine the sweet chili sauce, fish sauce, sambal, and lime juice.
- Peel and devein the prawns.
- Thread the prawns onto two skewers and place onto a flat plate.
- Pour ⅔ of the sauce over the skewered prawns, reserving the rest as a dipping sauce.
- Reduce the heat on the grill to Medium-Low and place the prawns onto hot grate.
- Drizzle any sauce from the plate onto the prawns to help create a glaze.
- Cook for 90 seconds to 2 minutes per side, depending on the size of the prawns.
- Serve with rice and garnish with chopped cilantro, if desired.
