Sweet Chili Grilled Prawns

Ingredients
  • 6 oz prawns, U8 or 16/25 size
  • ⅓ cup sweet chili sauce (like Mae Ploy sauce)
  • 1 tbsp fish sauce
  • 1 tsp sambal
  • 2 tsp lime juice (juice from half a lime)
  • togarishi shichimi (optional)
  • cilantro for garnish
Instructions
  1. Heat and clean the grill, heating the grate to High.
  2. In a bowl, combine the sweet chili sauce, fish sauce, sambal, and lime juice.
  3. Peel and devein the prawns.
  4. Thread the prawns onto two skewers and place onto a flat plate.
  5. Pour ⅔ of the sauce over the skewered prawns, reserving the rest as a dipping sauce.
  6. Reduce the heat on the grill to Medium-Low and place the prawns onto hot grate.
  7. Drizzle any sauce from the plate onto the prawns to help create a glaze.
  8. Cook for 90 seconds to 2 minutes per side, depending on the size of the prawns.
  9. Serve with rice and garnish with chopped cilantro, if desired.
