Tom Collins
- 3 parts gin
- 2 parts lemon juice
- 1 part simple syrup
- 4 parts club soda (or as much as you desire)
- Chill a tall Collins glass with ice.
- In a shaker, add crushed ice, gin, lemon juice, and simple syrup.
- Shake or stir to combine and chill.
- Strain into partially ice filled chilled Collins glass.
- Top with club soda and gently stir to combine.
- Garnish with a lemon or lime slice speared with a cherry, if desired.
