Chocolate Banana Walnut Muffins
- 1½ cups flour
- ½ cup cacao powder
- 2½ tsp baking soda
- ¼ tsp salt
- ⅓ cup coconut sugar
- 3 ripe bananas
- ¾ cup almond milk
- 2 tbsp coconut oil
- ¼ cup walnut pieces
- Preheat oven to 350 degrees.
- Prepare a muffin tin with paper cups.
- In a large bowl, combine the flour, cacao powder, baking soda and salt.
- Mix the coconut sugar, bananas, almond milk, and coconut oil in a blender.
- Add the wet ingredients to the dry ingredients and mix with a spoon until incorporated.
- Fill the muffin cups ¾ full, sprinkle with walnut pieces and bake for 25 minutes, turning halfway through.
- Cool on a rack for at least 20 minutes before plating.
