Sauerbraten Stew

As promised, here is the post on how I use leftover sauerbraten and gravy to make a stew. The stew aspect of this recipe is pretty straightforward – cook potatoes, celery, carrot, and onion in beef stock/broth with a little seasoning of summer savory and thyme. Then simply add the cubed leftover sauerbraten and gravy to heat through and meld the flavors. Easy?  Yes, indeed.  Tasty? Have a hankering for carnitas? Well, let me tell you that cooking it sous vide style will blow your mind!  When cooking for one, portion control is the toughest aspect. If you make too much, you either fall prey to over-eating or having to ‘enjoy’ that same dish numerous days in a row or eventually you end up throwing the extras out as waste. It snowed about 6 inches last night and in the Pacific Northwest, that means nearly everyone stays home. So I decided to take advantage of the ‘snow day’ and make myself a breakfast I haven’t made in quite a while. I paired this sauerbraten with butter fried porcini egg noodles and roasted cauliflower. Cubana Churrasco de Sopa

Here is my second attempt at Bob Lamson’s challenge.  I am using a scaled down and tweaked recipe from the Creative Cuisine ‘Outstanding One Pot Meals’ booklet. Putting this Cuban style beef stew together was fairly easy and letting the Uno control the cooking in my rice cooker made it even easier. The effort is all in the prep and once done, all you do is place it all in your rice cooker and set the Uno for the time and temperature (yes, I actually set the timer this time!). Almond Joy

This drink is definitely dessert-like with the flavors of rum, coffee, amaretto, and coconut playing well together… just like the flavors in the candy bar of the same name. I do not suggest too many of these cocktails at one sitting due to the sweetness – I can imagine the major hangover that these would produce. Today I am preparing sauerbraten. That’s right, you read that correctly… sauerbraten – that delicious German beef roast which is marinated for 3 days in red wine, vinegar, onions and spices. Chicken Kimchi Fried Rice

Fried rice… one of my favorite dishes. There are so many ways to make this easy and delicious dish. Tonight, I am going simple with a quick chicken kimchi fried rice. I added some stir fried vegetables to the recipe because we should all be eating our vegetables, right? This recipe makes a very healthy portion so you may end up with some leftovers. Mini Kofta Meatloaf

Tonight I made a meatloaf derived from a Mediterranean recipe for koftas.  Here is the best way I can describe what koftas are: they are intensely spiced kebabs made from ground meat. I made koftas for some friends one summer on the grill and I did not feel like firing up the barbecue to grill in January just to enjoy those same deep flavors. I was, once again, looking for a flavorful winter comfort food to make and decided to combine koftas with meatloaf.  The results speak for themselves… a wonderfully spiced and moist meatloaf for one.
