Today’s recipe fulfills a friend’s request. He asked for a soft and chewy chocolate chip cookie recipe that yielded a moderate amount. So, I had some down time today and thought “It’s a perfect time to fulfill this request”. I started by shrinking a reliable recipe and then tweaking it slightly to give my own special touch. This recipe yields approximately 36 soft, chewy, slightly sweet but oh-so chocolatey cookies. I call it a success… and when you try them, you will too! Today I made another dessert to share with others – this time for a friend to share with her co-workers. This cake was easy to prepare and is unique in flavor and texture. I liked it… a lot! The hazelnut flavor is present but not obtrusive. The simple chocolate glaze enhances the hazelnut flavor (think Nutella!) without overwhelming it. This cake is nutty but not sweet in flavor and different enough in texture; moist yet fluffy and slightly grainy that gives a pleasant toothsome aspect to it. As I said earlier, I like it a lot. I will make this one again… and again… and again I am certain. You should try it too – I am sure you will enjoy it as much…
Today I want to share with you a delicious Irish Freckle Bread recipe just in time for St. Patrick’s Day. This hearty whole wheat bread (or should I dare call it a fruit cake?) is chock full of flavor and delicious fruits – raisins, cranberries, currants, prunes, and dates. Moist and dense, you would think a little goes a long way – which it does – but it is also addicting; you just have to have a second slice! I found this recipe on the King Arthur flour website and loved its simplicity, but made some changes of my own. So here’s my take on this tasty Irish breakfast bread. Give it a try and you’ll agree… this tasty treat should…
This drink is definitely dessert-like with the flavors of rum, coffee, amaretto, and coconut playing well together… just like the flavors in the candy bar of the same name. I do not suggest too many of these cocktails at one sitting due to the sweetness – I can imagine the major hangover that these would produce. Hahahaha… But they are tasty (in moderation, just like eating the candy bar!) and deserve a place as a nice, after-dinner cocktail. Shall we get shaking? I am beginning 2017 on a sweet note with a decadent dessert. It is no secret I love cinnamon rolls – my daughters can attest to me baking them when they were still at home – and that I love cheesecake. So why not combine the two? Which is exactly what I have done. Again I twisted and tweaked (or is that swirled and twirled?) a recipe to suit my particular tastes and it let me use my small spring-form pans! The crust is a blend of vanilla wafers and graham crackers, the batter is New York style for its lightness, and the results are delicious. Feed your sweet tooth and make this recipe… you will not be disappointed! Save Print Cinnamon Roll Cheesecake Prep time…
Do you like homemade apple pie? Do you not want to make a full-size pie that you have to eat by yourself over several days? I agree… no matter how much I like something (even apple pie!), I don’t want to eat it every day and I certainly don’t want to waste it. Well, here is a recipe for making a skillet apple pie for one. Yep, that’s right… a real deal apple pie for one person – YOU! I wanted to make a delicious pie that did not take extra effort (like pre-cooking the apples, making a caramel sauce, etc) and I think I have succeeded by blending several recipes together. So here you go… a…
We all have told, seen or heard jokes targeting the much maligned fruitcake. Which is really a shame, because the brick/lead weight/anvil connotation is probably not fairly earned if we base it on the plethora of European ‘fruit cakes’. These fruit cakes include Italy’s panettone and Germany’s stollen which are light and flavorful with sweetness from fruits and citrus. I consider both wonderful treats during the holidays and today I want to share with you a quick and easy (read ‘non-yeast’) recipe for stollen. This recipe is based on one I found on the King Arthur Flour website – which of course, as usual, I modified. So, preheat the oven to 325 degrees because this dough comes…

Today’s experiment was with cookies. No, not the annoying web cookies stored in your browser, but that holiday treat everyone enjoys – at least everyone I know. I based this recipe on a Lebkuchen recipe, making some slight adjustments. The cookie it produces is a flavor bomb – honey, cinnamon, cloves, nutmeg, almonds, ginger, vanilla and rum. That’s right, I wrote ‘rum’. I made a simple rum glaze for these warm spiced treats and these cookies could be called chewable Hot Buttered Rum! So preheat that oven, we have family and friends needing these delights! Save Print Spice Cookies Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 60 Ingredients 1½ cups…
Instead of slices of Banana Bread or deeply flavored Chocolate Banana Walnut Muffins, do you just want the convenience of a tasty Banana Walnut Muffin? Well, you are in luck as here is my go to Banana Walnut Muffin recipe based on Elise’ recipe at Simply Recipes. This recipe is simple and can be made without a mixer – hand or stand! It creates a moist, slightly sweet, banana forward muffin that in my opinion is a winner. So let’s get baking… we have muffins to enjoy!
