Billionaire

Tonight’s cocktail is a riff on the Millionaire that I believe is aptly named since it is a step above. The key ingredient in this drink is the pomegranate syrup and while it is only a small amount, it is necessary. Of course, I did not buy any of the commercially available pomegranate syrups you can find at the store (although you can, but be aware that they may just be high fructose corn syrup with red food coloring!), I made my own.  And I skipped the whole process of dealing with the actual pomegranate fruit to get the juice laden arils. How you ask?  Simple, I reduced a small amount of POM Wonderful pomegranate juice which is 100% juice. The results… nothing short of spectacular and definitely worth that little extra effort.  After a few of these beauties, I will easily feel like a billionaire!  Time to hide the credit cards and checkbook!

Ingredients
  • 2 oz bourbon
  • 1 oz lemon juice
  • ½ oz pomegranate syrup
  • ½ oz simple syrup
  • ¼ oz absinthe for rinse
  • lemon wheel for a garnish
Instructions
  1. Chill a cocktail glass.
  2. Add all ingredients except the absinthe and garnish into a shaker, then fill ¾ full with ice.
  3. Shake well to combine and chill.
  4. Pour absinthe into the chilled cocktail glass and swirl to coat the inside.
  5. Strain the cocktail into the chilled, absinthe coated cocktail glass and garnish with lemon wheel.
