Menu for the 2nd Week of October

Well, now that we are fresh off the success of last week’s menu planning, let’s keep up with this concept and put together another weekly menu. Did you see the common ingredients that were shared in last week’s menu? Did you also notice (via @cooking_4_one Instagram updates) which meals I switched during the week to show flexibility? I invite you to follow me there and see pictures of the previously posted dishes I prepare. Besides who doesn’t love the plethora of food pictures flooding social media?  Anyway, this week will follow the same focus – a wide variety of meals to enjoy while optimizing ingredients to minimize waste. So if you are ready, here’s the plan!


Sunday – Knackwurst, Roasted Potato, and Braised Bacon Caraway Cabbage

Let’s get some cabbage into the menu since it is a popular Autumn vegetable. And I consider it a comfort food of sorts!


Monday – Chicken Cordon Bleu

This dish will use the remaining prosciutto from last week’s Roasted Cauliflower Soup with Prosciutto Bark in a most delicious way!


Tuesday – Egg Roll Noodle Bowl

I recently found this recipe for a deconstructed egg roll which piqued my curiosity. So I will be giving this one my unique tweaks and touches… stay tuned!


Wednesday – Mini Kofta Meatloaf

Again, here is another wonderful Fall comfort food. Just in time for the cooler weather we are expected to experience this week.


Thursday – Sous vide Carnitas

This dish brings a lot of flexibility to the table… and a chance to use some of the cabbage in a spicy slaw! Next week, expect to see carnitas fried rice if there are any leftovers…


Friday – Manicotti

In keeping with the pasta Friday theme, I am going big with manicotti for one. Will it turn out? I will let you know on Friday!


Saturday – Coriander Crusted Tilapia

This dish is one I used to prepare regularly and I just dropped off the rotation for some unknown reason. Well, I am bringing it back because it deserves to be shared! Look for the sides too; I may get inventive…
