Tom Collins

Here is a throwback to the old days. This cocktail is one of the first I ever ordered at a bar once I turned 21 and could legally order a drink. Basically it is a fizzy gin lemonade. What’s not to like about that? Perfect for a warm late Spring or Summer evening, the Tom Collins (gin based) can be made with vodka (a Vodka Collins), tequila (a Juan Collins), or whiskey (a John Collins) to suit your tastes. There is a lot of interesting information about the convoluted history of this cocktail, but I won’t delve into the foray of where, who, or how this cocktail originated. Let’s suffice it to say we will have to wait for time travel to solve that mystery. With four easy to find ingredients, this cocktail should be on everyone’s rotation. Making it is easy too. The ratio is easy to remember – 1 part simple syrup, 2 parts lemon juice, 3 parts gin, and 4 parts club soda (or less as you desire). Just combine the first three ingredients over ice, stir to chill, strain into a tall glass with a bit of ice and top with club soda. Garnish with a lemon or lime slice speared with a cherry if desired. As for me, I think it is time I got re-acquainted with my old friend Tom. You can find us sitting in the gazebo on this nice warm June evening.
