Here is a fast and easy way to make cake from a mix for one (or two). I used a Pillsbury Devil’s Food cake mix for this recipe and it worked out perfectly. I simply divided the cake mix and its preparation instructions into thirds. Finding the correct timing for the small cake was the trick – and of course making a small amount of frosting to top it. I opted for an amaretto cream cheese frosting which paired wonderfully with the chocolate cake. Here is how I did it… now you can too!
Preheat the oven to 350 degrees. Grease and flour 2 small cake pans like the ones pictured below
Add the cake mix, oil, egg, and water to a small bowl. Whisk or stir until well combined. Pour the batter into each cake pan. Bake for 25 minutes or until a toothpick comes out clean. Place on a wire rack and allow to cool for 10 minutes. Before completely cool, turn cake out onto the wire rack and the cake pan should release easily. When ready to serve, make the frosting by whisking together the frosting ingredients in a small bowl. Frost the cakes by either dipping or pouring the frosting over the cake and sprinkling with ground nutmeg (if desired).
