Cubana Churrasco de Sopa

Here is my second attempt at Bob Lamson’s challenge.  I am using a scaled down and tweaked recipe from the Creative Cuisine ‘Outstanding One Pot Meals’ booklet. Putting this Cuban style beef stew together was fairly easy and letting the Uno control the cooking in my rice cooker made it even easier. The effort is all in the prep and once done, all you do is place it all in your rice cooker and set the Uno for the time and temperature (yes, I actually set the timer this time!). A few hours later I noticed the wonderful fragrance from this dish. It was pretty incredible as I did not have to do anything but go about my business until the time was up. The flavors are incredible and the gentle cooking left the beef super tender and the vegetables slightly crunchy!  You have to try this one… it really is that good!

Ingredients
  • 8 - 12 oz beef bottom round, cut into 1 inch pieces
  • ½ onion, cut into ½ inch pieces
  • ½ green onion, cut into ½ inch pieces
  • ½ red pepper, cut into ½ inch pieces
  • ⅓ cup green olives, sliced
  • 1 tbsp tomato paste
  • 1 14oz can diced tomatoes
  • 1 cup vegetable broth
  • 1 cup beef broth
  • 1 tbsp apple cider vinegar
  • ½ cup orange juice
  • ½ tsp oregano (preferably mexican oregano)
  • ½ tsp ground cumin
  • 1 bay leaf
  • ½ tsp salt
  • ¼ tsp bleck pepper
Instructions
  1. Set up your Uno and rice cooker.
  2. Set the temperature to 165 degrees.
  3. Set the timer to 8 hours.
  4. Add all the ingredients into the rice cooker.
  5. Stir to incorporate and start the Uno.
  6. Cook for the set time before serving with cilantro and lime, if desired.

Set up your Uno and rice cooker. Set the temperature to 165 degrees and set the timer to 8 hours. Add all the ingredients into the rice cooker.

Stir to incorporate and start the Uno.

Cook for the set time before serving with cilantro and lime, if desired.
