Preheat griddle or large frying pan over medium/medium low heat.
Mix the egg substitute (or eggs), cream, spices and vanilla in a small bowl.
Pour the egg mixture into a large plate or pie plate for dredging the bread slices.
Brush the griddle or pan with coconut oil. Dredge each slice of bread in the egg mixture allowing the bread to soak up some of it. Place each slice on the griddle and cook for 3 – 5 minutes on each side or until slightly brown.
When both sides are slightly brown, re-dredge each slice and repeat the cooking process.
Remove to a plate and serve with maple syrup, whipped cream, fresh fruit, or anything you desire.
