Cake for One

Tonight, I was thinking I would love to have a nice slice of spice cake for dessert. Trouble is… I did not have a spice cake. Or a spice cake mix. Or the gumption to make a spice cake from scratch for just one piece.  Then I remembered a recipe a dear friend gave me years ago – the 3-2-1 cake and I still had some 3-2-1 cake mix in my pantry! The key to a 3-2-1 cake is to combine 1 angel food cake mix with 1 standard cake mix in a large zip top bag, combining well. Then you simply place 3 tablespoons of cake mix in a microwave safe coffee mug, add 2 tablespoons of cold water and microwave it for 1 minute. It works well, but I wanted a baked and frosted cake. So, here goes with my experiment, are you ready?

Ingredients
  • 6 tbsp 3-2-1 cake mix (see notes for details)
  • 4 tbsp cold water
  • 3 tbsp coconut oil
  • 3 tsp powdered sugar
  • ¼ tsp vanilla extract
  • cacao powder (optional)
Instructions
  1. Preheat the oven to 350 degrees.
  2. Flour a small cake pan.
  3. Add the cake mix and water to a small bowl and stir to combine.
  4. Pour the cake batter into the cake pan.
  5. Place the cake pan on a baking sheet and bake for 12 to 15 minutes or until a toothpick inserted into the cake comes out clean.
  6. Remove to rack and allow to cool.
  7. In another small bowl, add the coconut oil, powdered sugar and vanilla.
  8. Whip with a whisk to create a light frosting.
  9. When the cake is cool and removed from the cake pan, plate and frost.
  10. Lightly sprinkle cacao powder over top.
Notes
A 3-2-1 cake combines 1 angel food cake mix with 1 standard cake mix in a large zip top bag. Then you simply place 3 tablespoons of cake mix in a microwave safe coffee mug, add 2 tablespoons of cold water, mix and microwave it for 1 minute.
