How about another cookie recipe to help you bring holiday cheer to your friends and family? As a child, I remember my mom making a honey cookie that required a month of rest, but the recipe was lost long ago. So I spent some time searching and found a recipe close to what I remembered my mom making (but doesn’t require the month long slumber!) so today I am giving it a try (with my usual adjustments!) and sharing the results with you.
Preheat the oven to 350 degrees. Melt the butter, sugar, and honey in a small saucepan over low heat.
Cool the butter/sugar/honey mixture to room temperature.
Mix the vanilla, egg, baking soda, ginger and nutmeg together.
Add the egg/spice mix above to the cooled honey/sugar mix.
Add the flour to the wet ingredients in 3 – 4 batches, stirring until blended. Drop teaspoons of batter onto a prepared cookie sheet and bake 12 – 15 minutes, checking at 10 minutes.
