Ahhh… with Autumn falling here, I feel like baking a bit more. To kick off the baking season, here is a quick and simple but incredibly tasty recipe for banana bread. The beauty of this recipe is that it can be made in a single bowl with a spatula or spoon to ease cleanup, easily tweaked by adding nuts, chocolate chips, raisins, etc. I based it on Elise’ recipe on Simply Recipes. It also makes a fabulous muffin – perfect for a party or breakfast! So, let’s get baking!
Preheat the oven to 350 degrees and butter a 4×8 loaf pan.
In a large mixing bowl, mash the bananas.
Next, stir in the melted butter then add in the baking soda and salt. Mix the sugar, egg, and vanilla well.
Add in the flour, 1/3 at a time using a folding technique to create a smooth batter.
Pour the batter into the loaf pan and bake for 50 minutes to 1 hour or until a toothpick inserted into the middle comes out clean. Cool completely on a wire rack before removing from the loaf pan.
Note:
To make regular sized muffins, bake for 20 – 25 minutes in a 350 degree oven.
