Tonight’s dinner is simple and fast – and has a little bit of kick from cooking with tequila and lime!
Margarita Fajitas
Ingredients:
Preparation:
Heat a cast iron skillet over high heat. Place the sliced beef into a bowl, add salt and pepper and oil. Toss to coat and combine. Adding the oil to the meat will minimize the chances of the oil smoking excessively or igniting in the hot skillet. Just to be safe… keep a tight fitting lid close at hand to extinguish any flames! Once the beef is added to the skillet, stir fry and add the vegetables when the meat is no longer pink. As the vegetables begin to heat, sprinkle the chili powder, cumin and cilantro over the meat and vegetables, then add the lime juice. Stir to combine and turn off the flame before adding the tequila. Add the tequila to the hot pan and stir to combine. As the tequila and lime juice are absorbed and evaporated, return to the heat and add the garlic and lime zest, stirring to combine. Serve hot with warmed tortillas.
